The New Grilled Cheese
Happy National Cheese Lovers Day!
I bet you didn’t know that was a thing. Well, it is, and it’s today. To celebrate this hallowed day, I’m sharing five alternative recipes to add some flare to your classic grilled cheese sandwiches.
Roasted Tomato & Basil
This is probably one of the easiest grilled cheeses to make. Simply roast the tomatoes (check out this recipe for easy, oven roasted tomatoes), add some basil leaves and mozzarella cheese on Italian bread, and cook in a stovetop pan.
Cheese with a Kick
Sambal Oelek, a spicy chili paste, is the perfect way to spice up a classic grilled cheese. Pair with cheddar cheese and red pepper slices for a sandwich with some serious heat. Check out this website for a step by step breakdown on how to make it.
Broccoli Cheddar
If you’re a fan of broccoli and cheddar soup, this one’s for you. I like to pan sear the broccoli in olive oil and rosemary, and then just add little pieces of it to a cheddar cheese sandwich.
Goat Cheese & Pita
This one is for all my Mediterranean food lovers out there. Basically, just make this like you would any other grilled cheese, but keep the stove on low heat and keep a close eye on the pita bread. Fresh tomatoes are also a fun add in for this one.
Feta & Spinach
Last but certainly not least, this one is my personal favorite. I probably eat it at least three times a week. Spinach is an excellent source of vitamins and nutrients, and when paired with feta, a little mozzarella, and some pepper and rosemary, this grilled cheese is unstoppable.
