White Chicken Chili

Craving something warm, yummy, and perfect for cozy nights? This white chicken chili is sure to become a favorite!  

White Chicken Chili is one of my favorite meals because it’s so easy to make — especially for busy weeknights. It is easy to keep a lot of the ingredients on hand (cans, long-lasting fridge, and pantry staples) so that you can make this crowd-pleaser at the drop of a hat. I love using a rotisserie chicken to make it even faster!

This is a recipe you’ll want to be making year-round, even as it starts to get warm outside. The chili itself is delicious, but feel free to make it your own with toppings you love. And it’s just that much better when you load up on the toppings. Who wouldn’t love the addition of fresh avocado slices, crunchy tortilla chips, flavorful cheese, and fresh cilantro? Bring on those toppings!

Here's a delicious recipe for White Chicken Chili that’s hearty, flavorful, and easy to make!

Ingredients:

  • 1 tablespoon olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 lb boneless, skinless chicken breasts (or thighs), cooked and shredded

  • 2 cans (15 oz) white beans (such as cannellini or great northern beans), drained and rinsed

  • 1 can (4 oz) diced green chiles

  • 4 cups chicken broth

  • 1 teaspoon cumin

  • 1 teaspoon oregano

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon ground coriander

  • Salt and pepper, to taste

  • 1/2 cup sour cream (optional, for creaminess)

  • 1/2 cup shredded cheese (optional)

  • Fresh cilantro, chopped (for garnish)

  • Lime wedges (for serving)

Instructions:

  1. Cook the Aromatics: Heat the olive oil in a large pot over medium heat. Add the diced onions and cook for 4-5 minutes, until softened. Add the minced garlic and cook for another minute while stirring frequently.

  2. Add Spices: Stir in the cumin, oregano, chili powder, and coriander. Cook for 30 seconds to let these spices become fragrant.

  3. Add Chicken & Broth: Pour in the chicken broth, beans, green chiles, and shredded chicken. Stir well to combine. Bring to a simmer and cook for 15-20 minutes to allow the flavors to meld together.

  4. Make it Creamy (Optional): For a creamier chili, stir in the sour cream and shredded cheese just before serving, letting it melt into the broth.

  5. Season and Garnish: Taste and adjust seasoning with salt and pepper. Serve with fresh cilantro and lime wedges for extra flavor.

 

Optional Toppings:
